Cornucopia Salad (a family FAAAVORITE)

Ingredients for the Salad:
1 head romaine lettuce
1 cup chopped celery
6 scallions, chopped
4 mandarin oranges (canned is fine)
2 avocados
1 apple, crisp and tart
1/4 cup golden raisins
3/4 cup crumbled feta cheese
1/2 cup candied almonds

Ingredients for the Dressing:
1 teaspoon salt
1 teaspoon pepper
1/2 cup vegetable oil
2 tablespoons parsley, chopped
4 tablespoons cane sugar
4 tablespoons white wine vinegar

Instructions:
Chop veggies and layer in a large serving bowl.  Make the dressing and refrigerate until serving.  Dress salad to taste; best eaten the day-of.

Diet Notes: Gluten-free
