Vegetarian Sloppy Joe’s (my favorite supper yet!)

Behold! My favorite winter meal to date!
1 large onion
1-2 cloves garlic, minced
sea salt, pepper
1/4 cup tomato paste
1 + 1/4 cup tomato sauce
1 cup dry lentils*
3 tablespoons honey or maple syrup**
1 tablespoon dijon mustard
1-2 teaspoons chili powder
*For those on the SCD-diet, soak for 24 hours prior to cooking.
** For those on the SCD-diet, add honey. If following a strict vegan diet, add maple syrup.
1. Rinse lentils and pick out any stones or debris. In a large pot, add lentils water to cover the legumes by one inch. Bring to a boil and then simmer for about twenty minutes, until tender.
2. Meanwhile, chop onion and garlic. Saute onion in olive oil, sea salt and pepper until golden brown, about 10 minutes. Add in garlic and chili powder. Saute for an additional minute.
3. To the onion mixture, add tomato sauce, tomato paste, honey and mustard. Cook sauce on “low” until the lentils are fully cooked. Drain lentils and add to sauce. Cook on low for 2-3 more minutes.
4. Remove from heat and let cool for a minute or two. Serve plain or on a piece of toast or hamburger bun (choose gluten-free breads for gluten-sensitive). Top any desired toppings; avocado is highly recommended.
