Green Bean, Red Onion and Blue Cheese Salad

Here is a simple, hearty dish I made for our Thanksgiving festivities!
2-3 pounds green beans, trimmed
2-3 red onions
1/4 cup olive oil
4 tablespoons balsamic vinegar*
2 teaspoons dried thyme
sea salt, pepper
2 teaspoons tamari
1 teaspoon honey
1 cup crumbled blue cheese
*For those on the SCD-diet, use SCD-safe balsamic vinegar (aged at least 18 years).
1. Trim greenbeans and steam for 5 minutes, until bright green and al dente.
2. In a separate saucepan, saute sliced red onion in a little olive oil until carmelized.
3. When green beans are through cooking, rinse in cold water. Put in a separate bowl. Then add caramelized onions and blue cheese. Because the onions are still warm, it will melt the blue cheese.
4. Prepare the dressing (remaining olive oil, vinegar, seasonings and honey) and pour on top of the salad and serve!
