Peanut Butter Cookies: no sugar? with olive oil?

I know this sounds a little wacky, but these cookies are DELISH and there’s no butter, no processed sugar, and no white flour to be found on the ingredient list!  You can make them with or without chocolate (naturally, I added chocolate slivers to my dough).  This recipe was inspired and tweaked from a baking creation by Heidi Swanson.


2 cups whole-wheat white flour
1 teaspoon baking soda
1/4 teaspoon sea salt
1 cup all-natural peanut butter, chunky
1/2 cup maple syrup
1/2 cup honey
1/3 cup extra virgin olive oil
1 + 1/2 teaspoon vanilla
1/2 cup dark chocolate slivers


1. Preheat oven to 350.  Grease a baking sheet.

2. Mix wet ingredients, including peanut butter.  In a separate bowl, measure dry ingredients and toss with fork.  Gently add dry to wet, being careful not to over-mix.  Fold in chocolate chips or slivers.

3. Form into small balls about half the size of a golf ball.  Criss-cross dough with fork impressions and bake for 10-13 minutes!
