Sweet Potato Fries

If you’re craving some warm winter comfort food, pick up a couple of sweet potatoes at your local farmers’ market because these guys are in season!  Here’s a recipe for some healthy, delicious sweet potato fries.  These go marvelously with burgers (veggie or otherwise) and quiche!

Ingredients:
sweet potatoes
olive oil
chili powder
sea salt, pepper
garlic
cumin
thyme

Directions:

1.  Preheat oven to 450 degrees.  Cut sweet potatoes into wedges at varying thicknesses if you like some soft and crunchy.

2.  Roll potatoes in olive oil and spices.  Spread in a single layer on a rimmed baking sheet.  Bake 20-25 minutes, until soft in the center and crispy around the edges.

Diet Notes: Vegan, gluten-free, nut-free

    mmm i love sweet potato fries.
    the cafe i used to work in made an amazing horseradish sauce to dip them in. and i don’t even like horseradish.
    my husband makes sweet potato fries mixed with regular fries for a kind of sweet and salty thing.
    they are really more versatile than one might think.
    okay you have made me hungry. i have to go eat something now. 🙂
